Ingredients (8)

6.00 pears — peeled
410.00 g youngberries — mashed
500.00 ml wine — red
400.00 ml water
160.00 g sugar
cornflour — for thickening
1.00 Litres ice cream — vanilla
cream — fresh, whipped

Method:

Trim the bottoms of the pears to enable them to stand upright. Place in a saucepan.
Mix the youngberries, red wine, water and sugar. Add to the pears. Simmer until the pears are soft. Allow the pears to cool in the syrup before removing.
Reduce the syrup by a third. Thicken with a paste of cornflour and a little water.
Place a pear in the centre of each plate. Pour the sauce over.
Place a slice of ice cream on each side of each pear and decorate each with a little cream.
Finish with a caramel cage (optional), and mint leaves.
