    Nestlé Ideal Evaporated Milk

    cardamom pods

    mixed spice
  • 5
    eggs, beaten
  • 2
    ml
    vanilla essence
  • 180
    g
    white sugar
  • 30
    ml
    oil
  • 100
    g
    cashews
  • canned Nestlé Dessert Cream to serve
  • TOPPING
  • 200
    g
    brown sugar
  • 125
    ml
    water
  • 3
    pears or apples, cored, peeled and diced
  • 2
    lemons, juice and peel
 

Method

 
FLAN: Preheat oven to 140 ºC. Bring evaporated milk and spices to the boil. Take off heat and leave for 10 minutes, covered. Strain to remove spices, then add eggs, essence and sugar. Grease a 20 cm ovenproof dish. Place into a roasting pan and add water to reach halfway up sides of dish. Place cashews and custard in dish and bake for 20 minutes, or until a skewer inserted in the middle comes out clean. Cool and allow to set for 2 hours. TOPPING: Bring sugar and water to the boil until sugar has dissolved. Boil until sugar turns caramel colour. Add fruit and cook for 2 minutes. Stir gently. Add lemon juice and peel, then simmer until fruit is tender. Serve cold flan topped with hot fruit and cream.
