Pear salad with blue cheese dressing

Ingredients (7)

SAUCE
250.00 ml cream
30.00 ml blue cheese
10.00 ml dried tarragon
2.00 pears — peeled, halved and cored
salt
1.00 lettuce
walnuts — halved

Method:

Place the cream and blue cheese in a saucepan and heat slowly until reduced by half. Season with tarragon if desired. Place the pears in a saucepan and add just enough water to cover them halfway. Add 2 ml (1/2 t) salt and boil until just tender but still firm. Drain and cool. Arrange lettuce leaves on four plates and place the pears on top. Pour over the dressing and surround with a few walnut halves.
Serves 4.
