    ml
    sugar
  • 35
    ml
    water
  • 35
    ml
    vinegar
  • salt
  • pepper
  • 125
    ml
    cream
  • 1
    head lettuce
  • 825
    g
    pear halves
 

Method

 
Beat the eggs until frothy. Gradually add the sugar, beating thoroughly after each addition. Add the water and vinegar. Season to taste with salt and pepper. Pour into the upper half of a double boiler and heat until the mixture thickens, stirring continuously. Leave the sauce to cool, then add the cream. Wash the lettuce leaves and break into bite-size pieces. Place in a salad bowl and arrange the pear halves on top. Pour the dressing over the salad. Serves 6.
