Pear relish

Ingredients

  • 3
    pears, peeled, cored and cut into large cubes
  • 1
    onion, finely chopped
  • 1
    yellow pepper, cut into small cubes
  • 1
    red pepper, cut into small cubes
  • 1
    red chilli, finely chopped
  • 400
    ml
    cranberry or apple juice
  • 50
    ml
    marmalade
  • 2
    sprigs mint, chopped
 

Method

Place the pears, onion, peppers, chilli and juice in a small saucepan and bring to the boil over medium heat.
Simmer without a lid until the pears are soft and most of the liquid has evaporated.
Stir in the marmalade, heat through and remove from the stove.
Mix in the mint.
