Pear pudding

    castor sugar

    extra-large eggs

    cake flour

    cornflour

    baking powder
  • 5
    ml
    grated lemon rind
  • 790

    pear halves (1 large can), drained
  • 30

    sugar
  • 5
    ml
    ground cinnamon
 

Method

35-40 min
 
Preheat the oven to 180 ºC (350 ºF). Grease a shallow 30 cm diameter dish with margarine or spray with non-stick spray. Cream the butter and castor sugar until light and fluffy. Add the eggs one by one, beating well after each addition. Sift the cake flour, cornflour and baking powder together and fold into the butter mixture. Add lemon rind. Turn the mixture into the prepared dish and spread evenly. Arrange the pear halves on top. Mix sugar and cinnamon together and sprinkle over pear halves. Bake for 35-40 minutes or until golden brown on top and baked through. Serve with custard. Serves 6-8.
