Pear chutney

  • 1
    x 5 cm piece of ginger, peeled and grated
  • 12
    ripe pears, peeled and chopped
  • 250
    ml
    raisins
  • 2
    large onions, peeled and chopped
  • 10
    ml
    salt
  • 500
    ml
    castor sugar
  • 250
    ml
    treacle sugar
  • 10
    ml
    mustard seeds
  • 2
    lemons, rind - julienned
  • 2
    lemons, juice
  • 2
    chillies, seeded and chopped
  • 1
    cinnamon stick
  • 500
    ml
    white wine vinegar
 

Method

 
Place all ingredients in a large saucepan and heat gently, stirring until the sugar dissolves.
Bring to the boil and simmer, uncovered, stirring occasionally until the liquid has evaporated and the mixture is thick.
Ladle the chutney into warm sterilised jars and seal immediately.
Serve it with big wedges of goat's milk pecorino cheese.
