Pear and blue cheese salad

  • Mayo:
  • 1
    large egg
  • 2
    ml
    salt
  • 1
    chopped clove of garlic (optional)
  • 1/2
    tsp
    mustard
  • 1
    tsp
    lemon juice
  • 5
    ml
    sugar
  • 225
    ml
    sunflower oil
  • 2
    chopped spring onions
  • 125
    ml
    grated blue cheese
  • Salad:
  • Crisp lettuce
  • Sliced avocado
  • Sliced pears
  • Some toasted pecan nuts
  • Sprouts

Mayonnaise:
Put the egg, salt, garlic, mustard, lemon juice, sugar and 25 ml of the oil and give it a blitz, then with your blender running on low pour in the remaining oil in a slow steady stream (through the hole of the lid). Remove from the blender, add the spring onions and the grated cheese.

Salad:
Slice the lettuce and mix with a little of the mayo, put that into a food ring first, then the sliced avo and so on, a lovely starter or a light lunch.
