Pear and apricot crumble

    breakfast flakes, crushed

    pecan nuts, finely chopped

    melted butter
 

Method

Preheat the oven to 190 ºC (375 ºF). Spray a deep ovenproof dish with non-stick spray. Combine 100 ml of the brown sugar with the cinnamon. (Reserve the remaining sugar.) Arrange the pears in the bottom of the bowl and sprinkle with half the cinnamon sugar. Arrange the apricot halves on top and sprinkle with the remaining cinnamon sugar. Mix the breakfast flakes, remaining 50 ml brown sugar, pecan nuts and melted butter together. Sprinkle the mixture on top and bake for 15 minutes or till the topping begins to brown. Serve hot or cold with custard or ice cream. Serves 4-6.
