Pear and almond cake (Diabetic friendly)

Ingredients

  • one large egg
  • 125
    ml
    Sugarlite
  • 125
    fat free milk
  • 3
    ml
    almond essence
  • one tin of unsweetened pear halves
  • 250
    ml
    self-raising flour
 

Method

1 Beat the egg and the Sugalite until light and creamy. Beat in the fat-free milk and the almond essence.
2 Sift the flour and add it to the mixture. Mix well.
3 Lightly spray an 18 x 18cm cake tin with non-stick spray, then transfer the mixture into the tin.
4 Cut the pear halves into 1cm slices, and push the pear slices into the batter in the tin.
5 Bake in a preheated oven for 20 to 25 minutes. Allow to cool
