Pear, Parmesan and balsamic vinegar slice

    balsamic vinegar
  • salt
  • 250
    g
    ready made frozen or homemade puff pastry, thawed
  • 100
    g
    Parmesan cheese, shaved
  • TOPPING
  • 10
    ml
    olive oil
  • 15
    ml
    pine kernels, toasted
  • 4
    pears or apples, cored, cut into wedges and poached
  • freshly ground pepper
 

Method

 
Preheat oven to 200 ºC. Roll out the pastry on a floured board to a 12 x 30 cm rectangle. Lightly brush surface of pastry with olive oil. Season with salt and pepper. Bake for 15 minutes, or until golden. TOPPING Pile pears or apples, pine kernels and Parmesan cheese on top of pastry. Drizzle with balsamic vinegar and serve. Serves 6.
