Peanut chicken stir-fry

Ingredients (11)

4 chicken breast fillets — cut into strips
250 ml peanuts — finely chopped
30 ml oil
1 onion — chopped
1 carrots — grated
250 g mushrooms — chopped
1 red chilli — chopped
30 ml soy sauce
fish sauce
250 ml coconut milk
noodles — to serve

Method:

Roll the chicken in the chopped peanuts and fry in oil over moderate heat until golden brown. Remove from the pan, then fry the onion, carrots and mushrooms for about 4 minutes until soft and glossy. Stir in the chilli, soy sauce, fish sauce and coconut milk and simmer for about 5 minutes.

Dish the chicken back into the sauce, heat through and serve with noodles.
