Ingredients (8)

140.00 g butter — softened
180.00 g brown sugar — soft
2.00 ml vanilla — essence
1.00 eggs — extra-large, beaten
225.00 g peanut butter — crunchy
150.00 g flour — cake
2.00 ml salt
2.00 ml Bicarbonate of soda

Method:

Preheat the oven to 180 ºC (350 ºF). Grease a couple of baking sheets with margarine or spray with non-stick spray.
Cream the butter and brown sugar together until light and creamy. Add the vanilla essence.
Gradually add the egg and beat well. Add the peanut butter and blend.
Sift the dry ingredients together, add to the mixture and blend.
Shape into a ball, cover and chill for 1 hour.
Roll spoonfuls of the mixture into walnut-sized balls and arrange on a greased baking sheet, allowing room for them to spread.
Flatten slightly with a fork. Bake for 10 to 15 minutes or until golden brown.
Allow to cool slightly on the baking sheets before transferring to a wire rack to cool completely.
Store in an airtight container.
