Peach pudding

    baking powder

    white sugar
  • 115

    butter
  • 12
    peach halves, fresh or canned
  • 5
    ml
    ground cinnamon
  • 250
    ml
    sour cream
  • 2
    egg yolks
 

Method

 
Preheat the oven to 180 ºC (350 ºF). Grease a shallow ovenproof dish. Sift cake flour, baking powder, salt and 25 ml of the sugar together. Rub the butter into this mixture until it resembles coarse crumbs. Line the dish with the mixture, patting it down firmly. Arrange the peaches neatly and pour over the rest of the sugar mixed with the cinnamon. Bake for 15 minutes and pour the cream mixed with the egg yolks over this. Bake for another 30 minutes. Serve hot or lukewarm, with custard or cream.
