Peach ice cream

  • 500
    ml
    milk
  • 250
    ml
    cream
  • 7
    egg yolks
  • 125
    g
    sugar
  • 300
    g
    ripe peaches
  • 150
    g
    sugar
 

Method

 
1. Heat milk and cream in a double boiler, add eggs and sugar and sti until thickened and the custard coats the back of a wooden spoon. Strain and cool. 2. Purée peaches, strain and add sugar. Cook over low heat for 8 to 10 minutes. Cool and stir into custard. 3. Freeze until firm. Remove and beat with a whisk. Return to freezer. 4. Freeze until firm. Beat and freeze.
