250.00 g	cottage cheese — smooth
410.00 g	peaches — slices, tinned and drained
5.00 ml	orange — zest only
60.00 ml	castor sugar
125.00 ml	cream
20.00 ml	Sheridans gelatine
250.00 ml	cooldrink concentrate — dairy peach mix
	orange — zest only

Method:

Blend the cottage cheese, peach syrup and orange rind. Add the castor sugar and cream and mix.
Sprinkle the gelatine over 60 ml (4 T) cold water and leave for a few minutes. Heat over boiling water or in the microwave oven until the gelatine has melted and add to the cottage cheese mixture. Add the dairy peach mix and stir. Pour into pretty glasses or into a glass bowl and chill until set. Sprinkle with extra grated orange rind if desired, and serve with the peach slices.
Serves 3-4.
