    Marie biscuits, crushed

    butter, melted

    mixed spice
  • 1

    ground cinnamon
  • FILLING

    creamed cottage cheese
  • 2
    extra-large eggs
  • 145
    ml
    castor sugar
  • 100
    ml
    cake flour
  • 10
    ml
    vanilla essence
  • 420
    g
    peach slices in syrup, drained and coarsely chopped
 

Method

30-40 min
 
Mix the biscuits with the butter and spices. Spray a 20 cm loose-bottomed cake tin with non-stick spray and press the biscuit mixture onto the bottom and along the sides of the tin. Chill until set. Meanwhile preheat the oven to 160 ºC. Beat the cottage cheese, eggs and sugar together and sift the flour on top. Mix well and fold in the vanilla essence and chopped peaches. Turn the mixture into the crust and bake for 30-40 minutes until the filling has just set. Remove from oven, cool and serve at room temperature.
