Peach and lemon custard

    egg yolks
  • 65
    ml
    castor sugar
  • 80
    ml
    milk
  • 80
    ml
    fresh cream
  • 205
    g
    peach slices, drained
  • 45
    ml
    lemon juice
  • finger biscuits to serve
 

Method

 
Preheat oven to 140 ºC. To make custard, beat egg yolks and sugar together, then mix in milk and cream. Mash or blend peach slices until smooth and add to mixture with lemon juice. Divide mixture among four 125 ml (1/2 cup) ramekins. Place in a roasting pan and pour enough warm water to come halfway up the sides of the ramekins. Place roasting pan in oven and cook custards for 30 minutes, or until set. Remove ramekins from water and cool on a wire rack. Serve with finger biscuits.
