Peach and bacon salad

  • 250
    g
    rindless streaky bacon
  • 1
    packet mixed lettuce
  • 4
    large, firm peaches, washed and sliced
  • 100 g pecan nuts, tightly toasted and coarsely chopped
  • VINAIGRETTE DRESSING
  • 80
    ml
    grape vinegar
  • 60
    ml
    olive oil
  • 30
    ml
    lemon juice
  • 45
    ml
    honey
  • 5
    ml
    prepared mustard
  • salt and freshly ground black pepper to taste
 

Method

 
Turn on the oven grill. Roll up each bacon rasher and secure with a toothpick to maintain its shape. Place bacon rolls on a baking sheet, grill until done and the sides begin to brown. Drain on kitchen towelling and cool. Remove toothpicks. Arrange the lettuce leaves on four medium plates, place peach slices and bacon rolls between them and sprinkle with toasted nuts. Beat the ingredients for the dressing together and sprinkle over salad just before serving. Serves 4.
