Peach melba

    fresh, ripe peaches
  • 250
    ml
    dessert wine
  • 100
    g
    white chocolate, melted
  • 125
    ml
    cream
  • 250
    ml
    raspberries, fresh
  • 1
    Tbs
    icing sugar
  • 4
    scoops
    vanilla ice cream
  • 4
    pieces
    nougat, to serve
 

Method

Place the peaches in a saucepan with the dessert wine. Simmer for 15 minutes or until the peaches are tender.

Leave to cool in the syrup. Mix together the chocolate and cream. Purée the raspberries and icing sugar in a blender until smooth.

To serve, put a peach and a scoop of ice cream into each of 4 mugs.

Spoon some of the chocolate and cream mixture and the raspberry mixture over the ice cream. Add a piece of nougat and eat straight away.
