Pea soup

Ingredients

  • 30
    ml
    butter
  • 2
    leeks, well-rinsed and chopped
  • 2
    cloves garlic, peeled and chopped
  • 500
    ml
    vegetable stock
  • 750
    ml
    frozen peas, thawed
  • 125
    ml
    milk
  • 5
    ml
    nutmeg
 

Method

10 minutes
 
Melt butter in a large saucepan.
Add leeks and garlic and saut@eacute until leeks are soft.
Add stock and peas, cover and simmer for about five minutes.
Allow to cool slightly.
Transfer mixture to a food processor and blend until smooth.
Return to the saucepan and add milk and nutmeg.
Heat through while stirring constantly.
