Pea and mint purée

  • 500
    frozen peas
  • 1/4
    sour cream or crème fraÎche
  • 30
    small to medium mint leaves


Place the peas in a bowl, cover with boiling water and seal with cling wrap. Leave peas to ‘cook’ for 10 minutes.

Drain the peas and tip into a food processor. Add the sour cream and mint leaves and process until smooth.

Serve at room temperature or while still warm – with roast lamb.
