Patataes lemonades (potato wedges)

    waxy potatoes, peeled and cut into really fat chips
  • 1
    fresh oregano, finely chopped
  • 2
    lemons, juice only
  • 1/2
    lemon, grated zest only
  • Greek extra virgin olive oil
  • Salt and freshly grated black pepper to taste

Pre-heat oven to 200 C.
Put the chips in an oven proof dish in a single layer, season with the salt, zest, oregano and black pepper before adding just enough water to just cover the potatoes.

Bake in the oven until all the water has evaporated.

Drizzle more olive oil to brown the top and as soon as it’s golden brown, turn off the oven and leave them in the oven for a few more minutes.

Serve hot.
