Patataes lemonades (potato wedges)

Crispy fat potatoe wedges drenched in lemon sauce and spiced to perfection.

Ingredients (6)

1 kg potatoes — peeled and cut into chips
1 Tbs fresh oregano — finely chopped
2 lemons — juice only
1/2 lemon — zest only
olive oil — extra virgin
salt and freshly ground black pepper — to taste

Method:

Pre-heat oven to 200 C.
 
Put the chips in an oven proof dish in a single layer, season with the salt, zest, oregano and black pepper before adding just enough water to just cover the potatoes.

Bake in the oven until all the water has evaporated.

Drizzle more olive oil to brown the top and as soon as it’s golden brown, turn off the oven and leave them in the oven for a few more minutes.

Serve hot.
