    ml
    milk
  • 4
    cardamom pods, split
  • 1
    cinnamon stick
  • 3
    egg yolks
  • 40
    ml
    flour
  • 60
    ml
    castor sugar
  • 20
    ml
    lemon juice
  • 5
    ml
    grated lemon rind
 

Method

 
Heat milk in a saucepan with cardamon pods and cinnamon stick. Heat until just before simmering point then remove from the heat and set aside for 20 minutes. Beat egg yolks with flour and castor sugar, until light and thick. Remove the spices and pour the warm milk over the egg mixture. Mix well, then return to the saucepan. Heat gently and stir until mixture thickens. Add lemon juice and lemon rind. Cool, then use to fill a Swiss roll. This filling is also ideal to use in between the layers of a sponge cake.
