Pastel Macaroons

  • 250
    ml
    desiccated coconut
  • 60
    ml
    caster sugar
  • 1
    egg white
  • 15
    ml
    food colouring in 3 colours
  • 20
    ml
    edible silver balls to decorate
 

Method

Preheat the oven to 180 °C and spray a baking sheet with nonstick spray. Mix the coconut, caster sugar and egg white.

Divide the mixture evenly among three bowls and colour them as desired. Roll teaspoonfuls of the mixture into balls and arrange them on the baking sheet, flattening them slightly.

Decorate them with silver balls. Bake for 10-15 minutes or until done.
