Pasta with tomato, bacon and chicken liver sauce

    spaghetti

    olive oil
  • 1
    large onion, chopped
  • 2
    cloves garlic, crushed
  • 2
    green chillies, sliced
  • 250
    g
    streaky bacon, chopped
  • 225
    g
    chicken livers
  • 400
    g
    can tomatoes, chopped
  • 25
    ml
    tomato paste
  • 2
    ml
    sugar
  • 25
    ml
    lemon juice
  • 10
    ml
    freshly chopped rosemary
 

Method

Bring a large pot of salted water to the boil and boil the pasta according to packet instructions. Heat the oil in a saucepan and sauté the onion until soft. Add the garlic, chillies and bacon and cook for 2 minutes. Add the chicken livers and cook for a further minute. Add the remaining ingredients and cook for 5 minutes. Season to taste and pour over the spaghetti. Serve garnished with fresh rosemary.
