Pasta with smoked mussel and saffron cream

    smoked mussels
  • sunflower oil for frying
  • 1
    onion, finely chopped
  • 7

    chicken stock powder
  • 45
    ml
    white wine
  • 2
    ml
    sugar
  • 5
    strands saffron
  • 250
    ml
    cream
  • 500
    g
    pasta
  • fresh coriander to serve
 

Method

 
Drain mussels. Heat a little oil and sauté onion until glossy but not browned. Add stock powder (or 1/2 stock cube, crumbled), wine, sugar and saffron and cook for 3 minutes. If you need more liquid, add a little water. Meanwhile, cook pasta according to packet instructions. Add cream to onion mixture and heat through gently. Add mussels and cook for 3 to 4 minutes. Pour over drained pasta, sprinkle with coriander and serve.
