Pasta with smoked mussel and saffron cream

Ingredients (10)

210.00 g mussels — smoked
sunflower oil — for frying
1.00 onion — finely chopped
7.00 ml stock powder — chicken
45.00 ml wine — white
2.00 ml sugar
5.00 saffron — threads
250.00 ml cream
500.00 g pasta
fresh coriander — to serve

Method:

Drain mussels.
Heat a little oil and sauté onion until glossy but not browned. Add stock powder (or 1/2 stock cube, crumbled), wine, sugar and saffron and cook for 3 minutes. If you need more liquid, add a little water.
Meanwhile, cook pasta according to packet instructions.
Add cream to onion mixture and heat through gently. Add mussels and cook for 3 to 4 minutes. Pour over drained pasta, sprinkle with coriander and serve.
