Pasta with prawns, garlic and spinach

Ingredients (8)

300.00 g pasta — spaghetti
225.00 g prawns — frozen
125.00 ml butter
2.00 garlic — cloves, crushed
225.00 g spinach
finely shredded
45.00 ml fresh parsley — finely chopped
salt and freshly ground black pepper — to taste

Method:

Cook the spaghetti in sufficient rapidly boiling, salted water until al dente (done but still firm). Drain and set aside.
Pour boiling water over the prawns, leave for about a minute and drain. Melt the butter in a heavy-based saucepan and add the garlic. Add the prawns and stir-fry until done, this won’t take longer than 1-2 minutes. Add the spinach and parsley and stir-fry until the spinach looks slightly wilted. Season well with salt and black pepper.
Add the pasta, mix through and serve hot.
Serve with a green salad and bread.
