Pasta with prawns and asparagus

Ingredients

    ml
    butter
  • 5
    ml
    truffle oil (optional)
  • 1
    onion, sliced
  • 2
    garlic cloves
  • 150
    g
    fresh asparagus, cut into 2 cm pieces
  • 125
    ml
    cream
  • 50
    ml
    milk
  • 300
    g
    ready-peeled prawns
  • 15
    ml
    lemon juice
  • 200
    g
    pasta of your choice
 

Method

20 minutes
 
Heat the butter and truffle oil in a saucepan.
Add the onion and cook over a low heat until the onion turns golden brown.
Add the garlic and stir for another minute.
Increase the heat to medium and add the asparagus.
Stir for two minutes, then add the cream and milk.
Once the mixture is bubbling gently, add the prawns and simmer for two minutes.
Remove it from the heat and cover it.
Cook the pasta in a large saucepan of boiling water until tender. Drain, then stir in the prawn and asparagus sauce.
Serve garnished with fresh herbs or rocket.
Sprinkle with grated parmesan, if desired.
