Ingredients (10)

200.00 g pasta — shell noodles
oil
1.00 onion — finely chopped
1.00 red pepper — diced
8.00 courgettes — diced
15.00 ml chilli paste
375.00 ml sweetcorn — whole
125.00 ml sour cream
15.00 ml lemon juice
sea salt and freshly ground black pepper

Method:

Cook the shell noodles in rapidly boiling salted water until done, but still firm. Drain and set aside.
Heat the oil in a heavy-based saucepan and fry the onion until translucent. Add the red pepper and courgettes and stir-fry until tender.
Stir in the chilli paste and mealies. Stir in the sour cream and lemon juice and season with salt and black pepper to taste.
Add the noodles and mix. Serve hot.
