Pasta with garlic and Parmesan spinach

    spaghetti
  • 45
    ml
    olive oil
  • 4
    cloves garlic, crushed
  • 2
    red chillies, seeded and chopped
  • 30
    ml
    fresh origanum
  • 2
    ml
    ground black pepper
  • 200
    g
    baby spinach leaves
  • 190
    ml
    grated Parmesan cheese
  • salt and black pepper to taste
 

Method

 
Place spaghetti in a large saucepan of rapidly boiling water and cook for 12 minutes, or until tender. Heat oil in a small saucepan, add garlic, chillies, origanum and black pepper and cook for 3 minutes. Drain pasta and place in a serving bowl. Drizzle garlic oil mixture over it. Parboil spinach leaves, chop and toss with spaghetti. Season to taste. Sprinkle with Parmesan cheese and toss well to combine.
