Pasta with dried beans

Ingredients

  • 250
    g
    pasta shells or any other shape
  • 250
    g
    sugar or butter beans, soaked overnight
  • 1
    onion, finely chopped
  • 1
    green pepper, seeded and diced
  • 15
    ml
    curry powder
  • 1
    large, ripe tomato, skinned and cubed
  • 20
    ml
    tomato purée
  • salt and pepper to taste
  • little sugar
  • 1
    large butternut, skinned and cubed
 

Method

+/- 1 hr 30 min
 
Boil the pasta in rapidly boiling salted water until al dente. Drain well. Pour off the water in which the beans were soaked, cover the beans with fresh cold water and boil until soft. (Season with salt at the end of the cooking time.) Sauté the onion and green pepper in a little oil until soft. Add the curry powder and stir-fry for another minute. Add the cubed tomato, tomato purée and seasonings. Simmer until a thick sauce is formed. Boil the butternut in a little water until soft. Drain and add to the tomato mixture. Also add the pasta and beans, blending well. Heat through and serve with a salad, if desired. Serves 4-6.
