Pasta with creamy avocado sauce

    ml
    butter
  • 3
    spring onions, chopped
  • 5
    ml
    finely grated orange rind
  • 5
    ml
    finely grated lemon rind
  • 2
    ml
    ground coriander
  • 190
    ml
    cream
  • 45
    ml
    plain yoghurt
  • salt and freshly ground black pepper
  • 2
    soft ripe avocados, diced
  • 300
    g
    tagliatelle
  • 8
    rashers lean back bacon
 

Method

 
Melt the butter and sauté the spring onions until just tender. Add the rind and coriander and remove from the stove. Mix the cream and yoghurt and season to taste. Add the diced avocado and stir in the spring onion mixture. Cook the pasta in rapidly boiling salted water until just done but still al dente. Grill the bacon until crisp and chop coarsely. Mix the avocado sauce with the hot pasta, spoon into hot serving bowls and scatter the chopped bacon on top. Season with extra black pepper and serve with a bowl of chilli sauce. Serves 4.
