Pasta with chicken and tomato sauce

  • TOMATO SAUCE

    olive oil
  • 400
    g
    whole tomatoes, chopped
  • 7
    ml
    sugar
  • 2
    ml
    dried origanum
  • salt and black pepper to taste
  • 200
    g
    uncooked spiral pasta
  • 125
    g
    mozzarella cheese, diced
  • 250
    g
    cooked, deboned chicken, cut into pieces
  • 15
    ml
    Parmesan cheese
 

Method

 
Preheat the oven to 180 ºC (350 ºF). Grease an ovenproof dish. Simmer all the ingredients for the tomato sauce together until the sauce is no longer watery. Meanwhile boil the pasta in rapidly boiling salted water until just tender. Mix the pasta and tomato sauce, chicken and cheese and spoon into the prepared dish. Sprinkle with Parmesan cheese and bake for about 20 minutes or until the dish is warmed through and the cheese has melted. Serve with a salad. Serves 4.
