Pasta with chicken and sundried tomatoes

Ingredients

  • 800
    g
    chicken fillets, cut into strips
  • 25
    ml
    olive oil
  • 3
    cloves of garlic, crushed
  • 1
    onion, chopped
  • 12
    sundried tomatoes, chopped
  • 80
    ml
    white wine
  • Salt and freshly ground black peppe
  • 250
    ml
    cream
  • 15
    ml
    Dijon mustard
  • 30
    ml
    chopped fresh basil
  • 500
    g
    packet of pasta, cooked according to packet instructions
 

Method

15 mins
 
Heat the oil and stir fry the chicken in the oil, till cooked.
Add the garlic and onion and sauté until soft.
Add the sundried tomatoes and wine and simmer slowly until the wine has reduced to half.
Season with the salt and pepper, add the cream and mustard and simmer until the sauce is hot.
Add the pasta and fresh basil and serve immediately.
