Pasta with avocado and mint sauce and fried prosciutto

Ingredients (9)

300.00 g avocado
45.00 ml fresh mint — or basil
30.00 ml fresh chillies — 573
125.00 ml crème fraîche
salt and freshly ground black pepper
30.00 ml lemon juice
150.00 g prosciutto — Parma ham or bacon
500.00 g pasta — penne, cooked until al dente
parmesan cheese — freshly grated

Method:

Blend avocado, mint, 30 ml (2 tbsp) oil, créme fraîche and seasonings until smooth. Add lemon juice and blend well.
Heat remaining oil in a frying pan and fry prosciutto quickly on both sides until golden.
Pour avocado sauce over hot penne, top with fried prosciutto and sprinkle with cheese.
