Pasta with avocado and mint sauce and fried prosciutto

    avocado flesh
  • 45
    ml
    fresh mint or basil
  • 30
    ml
    olive oil
  • 125
    ml
    créme fraîche or cream
  • salt and milled pepper
  • 30

    lemon juice
  • 150
    g
    sliced prosciutto, Parma ham or bacon
  • 500
    g
    penne, cooked until al dente
  • freshly grated Parmesan cheese
 

Method

 
Blend avocado, mint, 30 ml (2 tbsp) oil, créme fraîche and seasonings until smooth. Add lemon juice and blend well. Heat remaining oil in a frying pan and fry prosciutto quickly on both sides until golden. Pour avocado sauce over hot penne, top with fried prosciutto and sprinkle with cheese.
