Pasta with asparagus, mushrooms and cheese

    spaghetti
  • 1
    clove garlic, peeled and halved
  • 200
    g
    fresh asparagus
  • 45
    ml
    olive oil
  • 1
    can sliced mushrooms, drained
  • 50
    g
    grated parmesan
 

Method

1. Fill a large saucepan with water and bring to the boil. Salt the water, add the pasta and the garlic, and cook until the pasta is al dente. Drain and discard the garlic. Rinse the pasta under cold water.

2. Cut the asparagus into 2,5cm pieces, leaving the tips whole. Heat the oil and fry the asparagus for about two minutes until just tender. Toss in the pasta and the mushrooms, and heat through over a medium heat. Serve sprinkled liberally with the Parmesan and season with freshly ground black pepper.
