Pasta spinach bake

    cloves garlic, crushed

    spinach (hard stems removed), finely chopped

    mozzarella cheese, sliced


Preheat the oven to 180 ºC (350 ºF). Spray a large ovenproof dish with non-stick spray or grease well with margarine. Cook the pasta in rapidly boiling salted water until tender. Drain and set aside. Sauté the garlic for about a minute in a little oil, add the spinach and heat until the spinach wilts. Add the capers and mix. Arrange layers of pasta and spinach in the prepared oven dish. Beat together the milk and eggs, season with salt and pepper to taste and a little nutmeg. Pour over the spinach mixture and arrange the cheese slices on top. Bake for 40 minutes or until the mixture has set. Serve hot with a salad. Serves 6.
