Ingredients (7)

2.00 garlic — cloves, crushed
45.00 ml fresh chillies — 573
400.00 g tomato purée
9.00 fresh basil
sea salt and freshly ground black pepper
450.00 g pasta — spirals
parmesan cheese — grated

Method:

Fry the garlic slowly in heated oil until fragrant and soft. Add the tomatoes and stir. Cover and simmer slowly for about 20 minutes until the sauce is thick and glossy. Add the basil and seasoning, stir and cover. Boil the pasta in rapidly boiling, salted water until just done, drain and spoon into serving plates. Spoon some of the sauce on top and serve with grated Parmesan cheese. Serves 4.
