Ingredients (12)

300.00 g pasta — of your choice
30.00 ml lemon juice
15.00 ml lemon — zest only
50.00 ml fresh chillies — 573
50.00 ml mayonnaise
1.00 garlic — cloves, crushed
1.00 spinach — finely shredded
8.00 piquanté peppers — halved
30.00 ml fresh parsley — chopped
30.00 ml fresh basil — chopped
50.00 ml almonds — toasted, chopped
4.00 spring onions — finely sliced

Method:

Cook the pasta in boiling, salted water until al dente. Remove from the heat and drain well. Add a little cold water to the pasta to prevent it from sticking together, then set aside. Combine the lemon juice and zest, olive oil, mayonnaise and garlic. Drain the pasta and stir in the prepared dressing to coat well.

Season with salt and freshly ground
black pepper. Stir in the spinach and the piquanté peppers. Place the salad in a bowl and stir in half the freshly chopped herbs and almonds. Top with the remaining
herbs and almonds, and garnish with the spring onions.
