Pasta salad with spinach

    pasta of your choice

    lemon juice
  • 15
    ml
    grated lemon zest
  • 50
    ml
    olive oil
  • 50
    ml
    mayonnaise
  • 1
    clove garlic, crushed
  • 1
    packet or bunch young spinach, trimmed and finely shredded
  • 8
    piquanté peppers, halved
  • 30
    ml
    freshly chopped parsley
  • 30
    ml
    freshly chopped basil
  • 50
    ml
    toasted almonds, chopped
  • 4
    spring onions, finely sliced
 

Method

Cook the pasta in boiling, salted water until al dente. Remove from the heat and drain well. Add a little cold water to the pasta to prevent it from sticking together, then set aside. Combine the lemon juice and zest, olive oil, mayonnaise and garlic. Drain the pasta and stir in the prepared dressing to coat well.

Season with salt and freshly ground black pepper. Stir in the spinach and the piquanté peppers. Place the salad in a bowl and stir in half the freshly chopped herbs and almonds. Top with the remaining herbs and almonds, and garnish with the spring onions.
