Ingredients (14)

dressing olive oil
25.00 ml vinegar — white
3.00 ml sugar
12.00 ml vinegar — balsamic
1.00 garlic — cloves, crushed
6.00 ml french mustard
salad pasta shells (conchiglie)
12.00 ml olive oil — light
70.00 g sun-dried tomatoes — halved
4.00 salami — sliced
1.00 red pepper — deseeded and cut into thin strips
150.00 g mozzarella cheese — diced
75.00 ml pine nuts — toasted
25.00 ml fresh oregano — chopped
25.00 ml fresh chives — chopped
150.00 g cherry tomatoes — halved

Method:

Dressing Blend the ingredients in a screw-top jar.

Salad Cook the pasta until just soft, drain, rinse under cold water and drain again.

Heat the oil in a pan and fry the sun-dried tomatoes, salami and red pepper until the latter is just soft.

Leave to cool.

Gently mix the pasta, salami mixture, cheese, pine nuts, herbs and tomatoes.

Drizzle the dressing over the salad and blend well.
