    fusilli, cooked until tender

    white sauce

    egg, lightly beaten

    onion, chopped

    tomatoes

    tomato paste

    ml
    sugar
  • 10
    ml
    garlic and herb seasoning
  • 2
    aubergines, peeled and thinly sliced
  • 15
    black olives, pitted and quartered
  • 500
    ml
    mozzarella cheese, grated
  • Parmesan cheese
 

Method

 
Combine the fusilli, white sauce and egg in a bowl. Mix well and press firmly into greased 28 cm diameter pizza dish. Sauté onion in oil until soft, add tomatoes, tomato paste, sugar and seasoning. Mix well and simmer for 10 minutes or until thick. Spread tomato mixture evenly over pasta base and top with aubergines, olives and cheeses. Bake at 200 ºC for 20 minutes or until browned. Serves 4.
