Pasta and avocado salad

  • SALAD
  • 200
    g
    cooked shell noodles
  • 1
    green apple, cubed
  • 2
    avocados, cubed
  • 30
    ml
    sunflower seeds
  • 15
    ml
    chopped fresh parsley
  • 10
    ml
    chopped fresh mint
  • grated peel of half a lemon
  • DRESSING
  • 25
    ml
    mayonnaise
  • 125
    ml
    natural yoghurt
  • 10
    ml
    lemon juice
  • 15
    ml
    honey
  • salt
  • freshly ground black pepper
  • 2
    rashers of bacon, crisply fried (to garnish)
  • chives (to garnish)
 

Method

 
Mix all the salad ingredients lightly in a salad dish. Mix the dressing ingredients together and pour over the salad. Toss lightly to coat all the ingredients with dressing. Decorate with chopped chives and diced bacon. Serves 6.
