    pappardelle (broad ribbon pasta) or lasagne sheets
  • 30
    ml
    olive oil
  • 1
    ml
    freshly ground black pepper
  • 3
    garlic cloves, thinly sliced
  • 375
    ml
    yellow cherry tomatoes, halved
  • 375
    ml
    red cherry tomatoes, halved
  • 45
    ml
    fresh lemon juice
  • 5
    ml
    salt
  • 5
    handfuls
    rocket leaves
  • 60
    g
    fresh Parmesan cheese shavings
  • 2
    lean rashers bacon such as shoulder bacon, fried and crumbled

Cook the pasta according to the packet instructions, drain and keep warm. If using lasagne sheets, halve each sheet lengthways.

Heat the oil in a large saucepan over medium heat. Add the pepper and garlic and sauté for 1 minute.

Add the tomatoes and lightly stir-fry for 45 seconds or until just heated through. Remove the pan from the heat and add the lemon juice and salt.

Mix the hot pasta, rocket leaves and tomato mixture in a large mixing bowl. Scatter the Parmesan cheese shavings and bacon on top and serve immediately.
