Ingredients (11)

300.00 g pasta — pappardelle
30.00 ml fresh chillies — 573
1.00 ml black pepper — freshly ground
3.00 garlic — cloves, thinly sliced
375.00 ml cherry tomatoes — yellow, halved
375.00 ml cherry tomatoes — halved
45.00 ml lemon juice — fresh
5.00 ml salt
5.00 handfuls rocket — leaves
60.00 g parmesan cheese — shavings
2.00 bacon rashers — lean, shoulder bacon, fried,crumbled

Method:

Cook the pasta according to the packet instructions, drain and keep warm. If using lasagne sheets, halve each sheet lengthways.

Heat the oil in a large saucepan over medium heat. Add the pepper and garlic and sauté for 1 minute.

Add the tomatoes and lightly stir-fry for 45 seconds or until just heated through. Remove the pan from the heat and add the lemon juice and salt.

Mix the hot pasta, rocket leaves and tomato mixture in a large mixing bowl. Scatter the Parmesan cheese shavings and bacon on top and serve immediately.
