    small shaped pasta
  • 60
    ml
    honey
  • 5
    ml
    French mustard
  • 30
    ml
    lemon juice
  • 250
    ml
    good-quality mayonnaise
  • 100
    ml
    olive oil
  • 1
    onion, finely chopped
  • 6
    sticks celery, finely chopped
  • 2
    yellow peppers, seeded and diced
  • 2
    red peppers, seeded and diced
  • 200
    g
    roasted cashew nuts
 

Method

1. Cook the pasta in a large pot with plenty of boiling salted water. Drain and leave to cool.

2. Mix the honey, mustard, lemon juice, mayonnaise and olive oil. Pour over the pasta and toss to coat. Add the onion, celery and peppers. Season well with salt and freshly ground black pepper. Spoon into containers and top with nuts.
