Passion fruit meringue squares

    lemon (grated rind only)

    large egg whites

    icing sugar

    mascarpone cheese or thick cream

    granadilla pulp
 

Method

Preheat oven to 170 ºC. Cream the butter and castor sugar together until light. Add the egg yolks and continue to beat for 1 minute. Fold in the milk, flour, baking powder and lemon rind and spoon mixture into a greased and lined 28 x 24 cm baking tin. Beat the egg whites until stiff, then gently fold in the icing sugar. Spread meringue over the cake batter. Bake for 50-60 minutes. Remove from the oven and allow to cool, then trim the edges and cut cake into squares, using a sharp knife. To make the topping, mix the mascarpone cheese and 50 ml of the granadilla pulp together. Top each meringue square with a dollop of the cheese mixture. Top each dollop with the remaining granadilla pulp to decorate, and serve. Serves 9-12.
