150.00 g butter
175.00 g castor sugar
4.00 eggs — large, yolk only
10.00 ml milk
175.00 g flour — cake
10.00 ml Baking powder
1.00 lemon — zest only
MERINGUE
4.00 eggs — large, whites only
300.00 g icing sugar
TOPPING
200.00 ml mascarpone cheese — or thick cream
80.00 ml granadillas — pulp

Method:

Preheat oven to 170 ºC. Cream the butter and castor sugar together until light. Add the egg yolks and continue to beat for 1 minute. Fold in the milk, flour, baking powder and lemon rind and spoon mixture into a greased and lined 28 x 24 cm baking tin. Beat the egg whites until stiff, then gently fold in the icing sugar. Spread meringue over the cake batter. Bake for 50-60 minutes. Remove from the oven and allow to cool, then trim the edges and cut cake into squares, using a sharp knife.
To make the topping, mix the mascarpone cheese and 50 ml of the granadilla pulp together. Top each meringue square with a dollop of the cheese mixture. Top each dollop with the remaining granadilla pulp to decorate, and serve. Serves 9-12.
