Method

 
1. Preheat oven to 180 ºC, lightly grease and set aside 2-3 baking sheets. Cream butter, lemon rind and icing sugar together until light and fluffy. Add granadilla pulp and mix well. 2. Fold the cornflour and self-raising flour into granadilla mixture. Fit a piping bag with a fluted nozzle and fill the bag with biscuit mixture. Pipe onto baking sheet, spacing evenly, and bake for 12 to 15 minutes or until golden. 3. ICING: In a mixing bowl, combine icing sugar, butter and granadilla pulp until smooth. Place bowl over hot bain marie, continue beating until smooth and glossy. 4. Dip the cold biscuits into the icing.
