Passion fruit and yoghurt mousse

    ml
    passion fruit
  • 40
    g
    icing sugar
  • 750
    ml
    natural yoghurt
  • 20
    ml
    gelatine
  • 1
    lemon, juice
  • 1
    orange, juice
  • 150
    ml
    fresh cream
 

Method

 
1. Blend passion fruit, icing sugar and yoghurt. 2. Heat both the juices. Sprinkle over the gelatine and stir until dissolved. 3. Pour into yoghurt mixture. Chill until it begins to set. 4. Whisk cream until stiff and fold into yoghurt. Pour mixture into one large mould or several small mounds and allow to set in the refrigerator. 5. Before serving, quickly dip mould just about to the rim in hot water. Turn out on to a chilled plate and decorate with cream or passion fruit. Serves 10.
