Passion fruit and mango cake

    cake flour

    baking powder

    butter
  • 250
    g
    castor sugar
  • 5
    ml
    vanilla essence
  • 4
    large eggs
  • 10
    ml
    grated orange rind
  • 15
    ml
    orange juice
  • 2
    fresh mangoes, coarsely chopped
  • 200
    g
    icing sugar
  • 2
    granadillas, pulp
  • 5
    ml
    lemon juice
  • candied orange peel, to garnish
 

Method

60 minutes
 
Sift together flour and baking powder. Beat butter and sugar together until light. Beat in the vanilla essence. Add the eggs, one at a time, beating well after each addition. Fold in orange zest, orange juice and flour. Fold in chopped mango and spoon into a 1,5 litre ring cake tin. Bake in preheated 180 °C oven for one hour, or until a skewer inserted comes out clean. Remove from oven and cool for 10 minutes, then turn out onto a wire rack. ICING: Mix together icing sugar and granadilla pulp. Add lemon juice and mix well. Spoon over cake once cake is cool. Sprinkle with candied orange peel to garnish.
