Parmesan mushrooms on toast

    ml
    butter
  • 15
    ml
    olive oil
  • 8
    brown mushrooms, wiped
  • 60
    ml
    grated Parmesan
  • 125
    ml
    cream
  • 8
    slices Parma ham
  • black peppercorns
  • 4
    slices ciabatta bread, toasted
 

Method

 
In a large frying pan, melt the butter and the olive oil.
Toss in the mushrooms and gently fry them for a few minutes on either side until light brown but still firm.
Add the Parmesan and the cream and heat through.
Place a piece of hot toast on a side plate, place two mushrooms on top with two slices of Parma ham.
Drizzle over the sauce and grind over black pepper.
